You may smell fresh bread and stuff being baked, but the stuff might just be going into deep freeze for stock. Ingredient prices go up and down seasonally, so when materials are cheap they make loads extra and freeze it for when costs are high. Then out comes the old stuff and after a quick blast to freshen it up, the stuff then goes on sale at a higher price then when it was made. They make profits, too, as well as cakes!!!.
