unfortunately, extremely poor Chinese people will eat any animal. Dog and cat meat apparently tastes like veal and both are considered as delicacies. Basically, any animal will provide some meat and therefore protein.
People, in the country, trap, kill and prepare their meat. However, in towns, they go to open air markets and buy from stalls that are supplied by trackers/hunters. There is neither refrigeration nor quality control nor environmental protection officers nor is there a sell by date stamped on a carcass. They need protein and buy whatever they can afford, in whatever condition that the carcass is in.
Obviously, rotting meat produces diseases which easily pass to humans from handling this rancid meat
