I love these figures which are produced regarding attendance at demonstrations and/or marchs.There are a few ways to estimate numbers......
1. People stand with clicker counters and count the number of people in a square yard/metre. Then the work out the square yard/area covered and multiply. Obviously nuts as not all square yards/metres will have the same number of people in them.
2. Another way is to fly over taking pictures, then count the numbers in a grid and then count the number of grids.This is less accurate as the grid areas are bigger than 1 square yard/metre.
