In the UK, BTW, if you hit a sheep,it is considered to be a wild animal and you have no claim. However,Cattle are considered as domestic animals and should always be safely fenced in and/or under control of a farmer. You can claim the farmer/owner for any damage caused.
Deer is anther weird category. If you hit a deer and kill it on the road you are not allowed to butcher it and take it home. You must report the kill to police. Anyone coming along after you,however, can butcher the deer, as it is then classed as roadkill.
