We have loads of fish and chip shops in the Uk.  Food is dropped into pans full of either cooking oil or animal fat to be deep fried.  Everything is under cooked because to cook things properly uses more oil or fat.  The test of a good chip (french fry)  is to hold it up by one end and it should flop over in the middle. Try it !! Our chip shops always use field potatoes as they are cheaper than frozen. Another bigger reason is the size of the chip.  Small ones use more oil and fat than larger ones.

Chinese fast food needs loads of rice which has loads of other stuff in the bags when it is delivered. For some reason Indian take a ways demand an extra coating on their rice.
