Don't know anything about the French Tax structure, but the general rule is that if you give money to a registered charity, then you may claim that gift as a tax deduction. If he took wages he would only get 25% as a top earner.
If he gives it all to charity this paper loss of 100% wages can be carried against international earnings. So he is onto a real winner by doing this move.
